Rehearsal dinners get treated as a warm-up and they are not. Half the room has never met the other half, everyone is tired, and the hosts want to talk rather than manage.
So we ran it like a small wedding: a real seating plan, a two-course menu that did not need a kitchen on site, toasts fixed at three minutes each and a hard stop at ten so that the people getting married could sleep.
